Ok, I know what you're thinking- grilled chicken salads are boring.......you obviously haven't had mine! :)
Load it up with lots of different veggies and a little fruit- yes, FRUIT!! It's sooo good. These are my usual ingredients:
lettuce
spinach leaves (cut up- if not, it's too much grassy spinach taste)
cucumber
tomato
broccoli
carrots
dill pickle slices (cut up- it's sooo good, don't knock it til you try it!)
Craisins or strawberries
grilled chicken
I put my dressing on the side. I use regular dressing, not fat-free, not low-calorie....I just put about 2 tbsp (one serving) on the side & dip my fork in verses pouring it on the salad. This way you get a little dressing in every bite!
My point is- don't be stuck in a rut with your grilled chicken salad!! It's ok to add unusual ingredients....EXPERIEMENT, you don't know til you try!
